Pork shoulder boneless from Plantation pigs farm in surrey; a super tender pork that is soft and juicy. Such a great value joint and much more tasty than people perceive, ideal for slow roasts or pulled pork. I cook this in a local stout with shallots carrots and diced potatoes. Let the stock reduce to almost nothing and add to your stock.
TOP TIP: To get the best out of your pork shoulder crackling rub some sea salt and olive oil into the rind. If the meat is cooked you can always remove the crackling from the pork shoulder and continue cooking.
